It started out of stubbornness. A bottle of shop cola is fine, but there’s something quietly satisfying about pouring a glass of something you carbonated yourself, tuned to your own taste, from ingredients you can name.
So we started keeping notes: which syrups held up under bubbles, how to keep a ginger bug alive through a cold week, why the same recipe was flat one Sunday and perfect the next. This site is those notes, cleaned up.
How we write recipes
Every recipe here has been made more than once, with ordinary equipment and grocery-store ingredients. We explain the why as well as the steps, so you can adapt things to what’s in the cupboard.
On safety
Fermentation makes real pressure, which is why we keep going on about bottles and burping. Please read the guide before your first ferment.
